Sweetcorn Lettuce Open Sandwiches

Growing up, bread was strongly associated with β€˜fever’. Unless one of us were not well, bread hardly made it to our home. Pieces of milk dipped in warm milk would be soothing only for the first slice and after that, its pleading and pushing game between amma and us πŸ˜€ Sandwiches were never heard of in our house and even in the rarest of the occasions, dad got a packet of bread – we only had it with jam. When I first moved to Bangalore and first came down to my office cafΓ©, I was pleasantly surprised by the number of types of sandwiches available. Since most of them had raw cucumber and tomato, I seldom bought them but was intrigued enough to try my own at home. The next time I went home, I bugged dad enough to buy me a sandwich maker and have been making different kinds of sandwiches ever since. Of course, sans raw cucumber and tomato πŸ˜€

Last Sunday, we wanted something light for dinner and I was not in the mood to cook anything elaborate. One look into the fridge, I saw some leftover lettuce. Anyways, sweetcorn is always in stock, thanks to S who shells fresh sweetcorn every other week. Sandwiches were made in less than ten minutes. They are very light and at the same time quite refreshing. Lettuce gives a good crunch and compliments the sweet taste of corn. I added some eggless mayonnaise to give it some structure and that made the sandwiches quite creamy.

To make Sweetcorn Lettuce Open Sandwich

Serves – 2

Time to prepare – 10 mins

What I used –

  • Brown Bread Slices, 6
  • Chopped Iceberg Lettuce, 1 cup
  • Sweetcorn Kernels, Β½ cup
  • Eggless Mayonnaise, 1.5 tbsp
  • Chilli Flakes, 1.5 tsp
  • Italian Dried Herbs, 1.5 tsp (Oregano, Basil, Thyme and Parsley)
  • Salt, as req

How I made –

  • Blanch sweetcorn for about 7mins, drain the water and set aside until cooled down.
  • In a bowl mix sweetcorn, roughly chopped iceberg lettuce, eggless mayonnaise, chilli flakes and Italian dried herbs. Add required salt and mix well.
  • Cut bread slices diagonally and spread the sweetcorn lettuce mixture on top.
  • Serve immediately. Didn’t I tell you it’s quite fast and easy to prepare!? πŸ™‚

Note: If required, bread slices can be toasted before spreading the prepared mix. Apply the spread only while serving or else the bread goes soggy. These sandwiches though served cold, taste great.

  1. Quick meal.. mayo is,a life saver. I totally agree regarding bread n fever. Also some time I hated moong dal tadka. I was down with typhoid n all I got to eat was this for quiet some time. πŸ˜‰ πŸ˜‰
