Today’s recipe is really not a recipe, as it is utterly simple. Caramelized Banana Ghee Roast is a very easy and delicious snack or dessert (depending on when and whom you serve). Usually Banana Roast is made with raw bananas or plantains, sprinkled with salt and red chilli powder – best served as side dish for rice. This recipe is made with ripe bananas and Nendran variant of banana works the best as it can hold its shape even after cooking. Ethapazham Nei Roast is very popular in Kerala and it can be made in jiffy!
This recipe of Nendran Ghee Roast or Caramelized Banana Ghee Roast uses very basic ingredients – Nendran bananas, a tsp of ghee and a tsp of sugar. I made a batch without any extra sugar and let the banana slices caramelize in their natural sugars – worked really well. You can roast the banana/ethapazham as brown as you want. The slight charred taste of the caramelized bananas taste amazing, if that’s what you prefer. The banana slices crisp up ever so slightly and when served warm, they are utterly delicious. Slice the ripe Nendran Banana into circles of about half a centimeter thickness. If you slice it too thin, they will char very quickly. And if you slice them too thick, the center will not be caramelized.
In a nonstick pan, heat 1 tsp of ghee. Place the banana slices in such a way that they are not overlapping. Sprinkle half a tsp of sugar on top. Cook on low flame.
In a couple of minutes, banana slices start to turn a darker shade of yellow. Flip them carefully and sprinkle remaining sugar. As both sides turn golden brown, remove from heat.
Serve warm as it is as snack. It can also be served warm with some vanilla ice cream.
- Sugar is optional. Banana slices will take an additional minute or two to caramelize in their natural sugars. If you prefer a sweeter version, increase the amount of sugar.
- Bananas can be sliced vertically also.
- I prefer to use non-stick pan as I can limit the amount of ghee and the banana slices will be easy to handle.
