Ingredients
  • 1.5cups Medium Thick Flattened Rice/Aval/Poha
  • 1/2cup Finely Chopped Onions
  • 1/4cup Fresh Green Peas
  • 1/2cup Chopped Boiled Potatoes
  • 1 Green Chilly Finely Chopped
  • 1tsp Finely Chopped Ginger
  • 2tbsp Oil
  • 1/2tsp Mustard Seeds
  • 1tsp Urad Dal
  • 1tsp Chana Dal
  • 1 Dried Red Chilli
  • 8-10 Cashews
  • 1/4tsp Asafoetida
  • 1/4tsp Turmeric Powder
  • 1/2 Lemon Wedge1 tbsp Lemon Juice
  • Few Curry Leaves
  • Fresh Coriander Leaves
  • Salt as needed
  • Water as needed
Instructions
  1. Soak flattened rice in enough water and drain off immediately. Set it aside until needed.
  2. In a thick bottomed pan, heat oil. Add mustard seeds, urad dal, chana dal, dried red chillies and fry until golden brown.
  3. Fry cashews until golden brown and finally add asafoetida.
  4. Next add finely chopped green chilli, ginger and curry leaves. Fry for few seconds.
  5. Add finely chopped onions and fry until translucent. Next add green peas and boiled potatoes.
  6. Add salt as needed for veggies and also add turmeric powder.
  7. Cook for a few minutes and then add soaked, drained flattened rice.
  8. Add salt needed for aval/poha and mix well.
  9. Sprinkle some water and cook it closed for 3-4 mins.
  10. Squeeze half a lemon wedge, mix well and finally sprinkle fresh coriander leaves. Remove from heat.
  11. Serve hot immediately.
