Ingredients
  • 2 cups All Purpose Flour
  • 1/2 cup Whole Wheat Flour
  • 2 tsp Baking Powder
  • 1 cup Water
  • 3/4 cup Milk
  • 1/4 cup Chopped Onions
  • 1/4 cup Chopped Tomatoes remove pulp
  • 1/4 cup Sweet Corn Kernels
  • 6-7 Pickled Jalapeno Slices
  • 1/4 cup Grated Cheese I used a mix of Cheddar and Mozzarella
  • 2 tbsp Oil
  • 1 tsp Sugar
  • 3/4 tsp Salt
  • 1 tsp Red Chilli Flakes
  • 1 tsp Mixed Italian Herbs

Eggless Savory Corn Cheese Waffles
Instructions
  1. In a mixing bowl add all purpose flour, whole wheat flour, baking powder, salt, sugar, red chilli flakes and mixed Italian herbs. Mix well.
  2. Add milk and water, make a batter that it not too thick but it should not be runny. Add oil and fold it in.
  3. Next add grated cheese, chopped onions, chopped tomatoes, sweet corn kernels and fold them in.
  4. Meanwhile heat the waffle maker and once it is ready, pour a big ladle of the batter at the center. Spread it out a little.
  5. Cook it on medium heat until it is fluffy and crisp. Remove it on to a plate and repeat the process with rest of the batter.
  6. Serve hot with ketchup or herbed tomato sauce, with additional cheese on top.
