Ingredients
  • 1cup Macaroni
  • 2cups Water
  • 1 Onion
  • 2 Tomatoes
  • 2 Dried Bay Leaves
  • 8-10 Garlic Pods
  • 1/4cup Chopped Mint + Coriander Leaves
  • 1/2tsp Red Chilli Powder
  • 1/4tsp Coriander Powder
  • 1/4tsp Garam Masala Powder
  • 1/4tsp Turmeric Powder
  • 2tsp Oil
  • Salt as needed
  • Few Curry Leaves
Instructions
  1. In a pan, heat oil. Add bay leaves and crushed garlic. Fry for a minute.
  2. Next add curry leaves along finely chopped onions and fry till they are translucent.
  3. Add finely chopped tomatoes and cook them till they are mushy.
  4. Next add the masala powders – turmeric powder, red chilli powder, coriander powder, garam masala powder and salt as needed.
  5. Cook for a minute or two and add finely chopped mint and coriander leaves.
  6. Add water and mix well. Bring this to a boil.
  7. Check for salt and spices, add macaroni and cook it closed for 12-15 mins on medium flame.
  8. As the water evaporates, macaroni should be cooked – remove from heat.
  9. Serve hot as it is.
