Ingredients
  • 250grams Instant Rice Noodles/Singapore Noodles/Mei Fun
  • 1 Onion Sliced
  • 1.5cups Mixed Vegetables(Carrots, French Beans, Cauliflower/Broccoli, Capsicum)
  • 2tbsp Sesame Oil
  • 2-3tbsp Finely Chopped Garlic
  • 1/2tsp Kashmiri Red Chilli Powder
  • 1tsp Coriander Powder
  • 1/4tsp Black Pepper Powder
  • 1/4tsp Turmeric Powder
  • 1/2tsp Curry Powder/Garam Masala Powder
  • 1tsp Sugar
  • 1tsp Apple Cider Vinegar
  • 1tsp Soy Sauce
  • Salt as needed
  • Water as needed
  • Sping Onion Greens/Coriander Leaves as needed
Instructions
  1. First soak the rice noodles in warm water and close it with a lid for 5-7mins.
  2. The noodles should be soft, drain off the water and set it aside.
  3. In a wok, heat sesame oil. Add finely chopped garlic and fry until fragrant.
  4. Add all the veggies including sliced onions and fry on medium flame until they are half-cooked.
  5. Now add all the spice powders – turmeric powder, Kashmiri red chilli powder, coriander powder, curry/garam masala powder and pepper powder along with sugar and salt.
  6. Cook for 2-3 mins until there is no raw smell and then add soy sauce.
  7. Next add the cooked rice noodles.
  8. Mix the noodles with the veggie mixture and check for salt, adjust as needed.
  9. Finally add the apple cider vinegar and finely chopped spring onion greens/coriander leaves. Mix well.
  10. Serve hot with any Indo-Chinese appetizers.
